Shortbread Pastry

Ingredients

2 tablespoons of sugar

Yolk of one egg

Pinch salt

3 heaped tablespoons of self‑raising flour

RL: under the above line is ‘3’ followed by dittos – maybe that means 3 heaped tablespoons of plain flour, but I can’t be sure.

Vanilla (RL: not sure how much – maybe ½ teaspoon)

Method

Cream butter and sugar.

Add the egg yolk.

Add the dry ingredients.

Press down onto a tray – never roll.

RL: I guess the vanilla gets added with the butter and sugar. And I’m guessing the ‘tray’ referred to is a greased baking tray, although I’m not certain of the size. And I have no idea how long to bake for, or at what temperature. Maybe try moderate, until they’re cooked. 👍😃 Apart from that, this recipe looks easy. 😲😨
