Apple Cake

RL: This was a difficult one to understand. Ingredients and method were mixed together. And the apples and their preparation aren’t mentioned. If you make this cake, and it works, please let me know and I can modify the recipe.

Ingredients

2oz (55 grams) butter

¼ pound (113 grams) of self-raising flour

½ tablespoon sugar

1 egg

2 tablespoons of milk

Method

Rub the butter into the flour.

Beat sugar, egg and milk together and add it flour and butter.

Roll half of it (RL: now I’m not sure what this means – roll it where?).

Then put hot apples on top (RL: I assume these have been stewed, but how many is anyone’s guess).

Then put the second layer of cake on top.

RL: It doesn’t mention baking the cake, but maybe in a 20cm tin in a moderate oven (180°C or 160°C for fan forced) until it’s done.

Icing

Wait until the cake is very cold.

Icing sugar, passionfruit and burnt coconut.

RL: Seriously, good luck with this one. I have no picture because I’m not sure what it’s supposed to look like. 😵😲
