Brown Pudding

Serves 6

Ingredients

¼ pound (113 grams) butter

2 ounces (60 grams) of sugar

Pinch of salt

2 eggs (RL: Yolks and whites separated)

2 tablespoons marmalade or other jam

1/3 teaspoon bicarbonate of soda

¼ pound of (113 grams) self-raising flour

¼ cup of milk (RL: I think this is the extra text that’s been squeezed in, but it’s not used in the method, so I’m not sure)

 

Method

Cream butter and sugar.

Add the neaten egg yolks.

Add half of the flour and beat well.

Add jam.

Add other half of the flour.

Add bicarbonate of soda.

Add stiffly beaten egg whites.

Steam for 1½ to two hours.
