Basic Butter Cake
Ingredients
½ pound (225 grams) of butter or margarine
2 cups of caster sugar
2 cups of self-raising flour
4 eggs
½ cup cold milk
Flavouring (RL: not sure how much, or whether it’s really needed)
Method
Cream butter and sugar together.
Beat in eggs, one at a time.
Sift flour in.
Add milk.
Give a good mix by hand.
This amount makes 48 small cakes, or 24 small cakes and one big cake.
RL: Not sure what sized patty cups or cake tin – probably just the cups from the supermarket, and perhaps a 20cm greased tin.
Bake in a moderate oven (180°C or 160°C for fan forced) for 20 to 30 minutes.
