Delicious Lemon Pudding
Serves 6
RL: I believe this is the same as Mum’s ‘Lemon Delicious Pudding’ which was a regular for us back in the 60’s and 70’s.
Ingredients
2 level tablespoons of butter or margarine
¾ cup sugar
4 level tablespoons self-raising flour
Grated rind and juice of one large lemon
2 eggs
1 cup of milk
Method
Cream butter and sugar.
Add sifted flour – half at a time.
Add grated rind and lemon juice.
Separate the egg yolks and whites.
Beat egg yolks with the milk, then add slowly to the mixture, stirring well.
Beat the egg whites stiffly, and fold into the mixture.
Place in a greased pie dish.
Place that dish in another dish of water.
Cook in the oven a 400°F (200°C or 180°C fan forced) for about half an hour.
