Lamingtons and Coffee Cake
RL: This one was a little tricky. There’s very little in terms of method. It appears to be a basic cake recipe which can be turned into lamingtons, a coffee cake or other type of cake. But it doesn’t tell you how to do that. If you make this cake and add to it to make it into something fabulous, please let me know and I can modify the recipe.
Ingredients
1 cup butter
1½ cups castor sugar
4 eggs
3 cups of self-raising flour
1 cup of milk
Vanilla (RL: not sure how much – maybe one teaspoon)
Method
Cream butter and sugar.
Add beaten eggs.
Add flour and vanilla.
Then add milk.
RL: It doesn’t mention baking the cake, but maybe in a 20cm tin in a moderate oven 180°C or 160°C for fan forced) until it’s done. It also doesn’t mention how to turn it into a coffee cake or lamingtons – perhaps the internet will help. 🤞
