Pancakes

RL: It says this makes three pancakes, but seriously will that be enough if you have a couple of people or more? I’m sure when we were kids, we ate 5, maybe 6 at a setting. Poor Mum.

 

Ingredients

4 ounces (115g) of flour

1 teaspoon baking powder

1 egg

Pinch salt

1 tablespoon of sugar

1 to 1¼ cups of milk

Buter for cooking

 

Method

Sift flour, baking powder and salt, and add the sugar.

Drop the unbeaten egg into a well in the centre of the dry ingredients.

Add a little milk and stir until a smooth batter is formed.

Add the balance of the milk, mix well, and allow to stand for 30 minutes.

Melt a little butter in a frying pan, allow to brown, and wipe the pan with some kitchen paper.

Melt I dessertspoon of butter in the pan and poor in sufficient batter to barely cover the base of the pan.

Cook at moderate heat, loosening the edges with a knife.

Turn over.

When cooked, sprinkle with lemon juice and sugar and rollup ready to serve.
