Orange Cake (Gwen’s Recipe)

RL: I don’t remember Mum making Orange Cake, but I guess she must have. So this is Mum’s alternative to Aunty Anne’s version of Orange Cake.

Ingredients

7 ounces (1¾ cups, 200 grams) self-raining flour

3 eggs

4 ounces (115 grams) sugar

6 ounces (170 grams) butter

Grated rind of one orange

½ cup of orange juice (RL: It was a bit hard to read, so this may be 1 cup)

 

Method

Sift the flour.

Cream the butter.

Add beaten eggs gradually.

Fold in sifted flour alternately with rind and juice.

Place in a 9 inch (23 centimetre) square lamington tin.

Bake in a moderate oven (180°C or 160°For fan forced) for 25-30 minutes).
