Sponge

Ingredients

¾ cup sugar

½ teaspoon of bi-carb soda

1 cup plain flour

¼ cup milk

Teaspoon of cream of tartar

4 eggs

1 dessertspoon butter

Pinch of salt

Vanilla (RL: not sure how much – maybe a teaspoon?)

 

Method

Beat eggs, sugar and salt together well.

Add flour, sifted with cream of tartar, and fold in well.

Add vanilla.

And lastly boiling milk into which bi-carb of soda and butter have been dissolved.

Bake for about 20 minutes in a fairly hot oven (375°F/190°C a little lower for fan forced).

(RL: Not sure what sized cake tin – perhaps 20cm).
